Salad of the Week!

  • Arugala
  • Sprinkle of feta
  • Hunks of cantelope
  • Drizzled with olive oil
  • and a DASH of balsamic
  • Cracked/ground black pepper

Empty or place arugala in shallow bowl. Sprinkle 'some' feta, hence the word sprinkle, not pour, not a pinch. Spoon out some cantalope, place on top. Drizzle fine tasty virgin olive oil. Add the tiniest dash of balsamic vinegar. Top with fresh ground pepper.

I can't explain how these flavors blend. and how satisfying. This salad is so cleansing, so vitamin rich, so delectable. It's great as a side, appetizer or full meal. It would be lovely with a nice size piece of grilled salmon. 'nice size', depends on your size, and how much you worked out, your budget and your family tastes. Or, instead, could be served with a grilled chicken breast.

Me...I love it all by it's little self!
